St. Patrick’s Day Mint Oreo Dessert Bars
I love using Oreo cookies to make various holiday desserts.
It’s an easy way to add a lot of delicious flavor to the dessert, and you can take advantage of seasonal offerings to add a bit of color, too!
For example, I make Halloween Oreo cake bars every year, and these Valentine’s Day Oreo brownies are always a hit.
And of course, an Oreo pound cake can be enjoyed for any holiday, and you can swap out varieties of Oreos for some color.
So making St. Patrick’s Day cookie bars chock full or Oreos was only natural!
These bars are perfect for serving as an easy dessert at a St. Patrick’s Day party, or you can sell them at a bake sale, or bring them as a treat for your child’s class party at school.

How to Make St. Patrick’s Day Oreo Bars
It’s really easy to whip these up!
Ingredients You’ll Need:
- Butter
- Sugar
- Brown Sugar
- Eggs
- Vanilla Extract
- All-Purpose Flour
- Cornstarch
- Baking Powder
- Salt
- White Chocolate Chips
- Mint M&Ms
- Mint Oreo Cookies
How to Make It:
Combine wet ingredients. First, you’ll beat melted butter with sugar and brown sugar until combined.
Add the eggs, one at a time, followed by the vanilla extract.
Add mix-ins. Next, you’ll add in some of the white chocolate chips, M&M candies and Oreo cookie pieces, reserving some for topping later.

Mix the batter until the additions are incorporated well.

Bake. Last, you’ll spread the batter into a prepared pan. Top with the reserved white chocolate chips, M&Ms and Oreo pieces.

Bake for about 40 minutes, or until the edges are beginning to turn golden brown.
Remove from oven and cool completely before slicing and serving.

Notes and Adaptations:
- We like the color and flavor from Mint Oreos, but you can use regular Oreo cookies if preferred.
- Leftovers can be stored at room temperature in an airtight container for up to 3-4 days.
- If you can’t find mint M&Ms, you can use regular green M&Ms.

These mint Oreo cookie bars are perfect for St. Patrick's Day! They're chock full of chopped cookies, chocolate chips, and M&Ms, making a festive treat everyone will love.
Ingredients
- 2 cups unsalted butter, melted
- 2 1/2 cups sugar
- 1 cup brown sugar, packed
- 4 eggs
- 2 egg yolk
- 4 teaspoons vanilla extract
- 5 cups all-purpose flour
- 4 teaspoons cornstarch
- 1 teaspoon baking powder
- 2 teaspoons salt
- 2 cups white chocolate chips
- 2 cups green Mint M&M’s
- 24 Mint Oreo cookies, chopped
Instructions
- Preheat oven to 350F. Line a 9x13" pan with parchment paper, or spray with cooking spray.
- Using an electric mixer, beat together the melted butter, sugar and
brown sugar until combined. - Mix in the eggs and egg yolks one at a time, mixing well after each addition.
- Mix in the vanilla extract until combined.
- In a medium mixing bowl bowl, whisk together the flour, cornstarch, baking powder and salt.
- With the mixer on low speed, gradually add the dry ingredients to the wet until completely incorporated.
- Add in 1 ½ cups white chocolate chips, 1 ½ cups M&M’s, and half of the chopped Oreos. Mix on low speed or by hand to combine.
- Spread the batter into the prepared baking dish, then top with remaining
white chocolate chips, M&Ms, and chopped Oreos, pressing them gently into the batter. - Bake for about 40 minutes, or until edges just begin to turn golden brown.
- Allow to cool completely before slicing and serving.
