When fall rolls around, I make (and devour) practically everything pumpkin spice.
Whether it’s old-fashioned pumpkin bread, pumpkin chocolate chip cookies, pumpkin gingerbread muffins, or pumpkin cream cheese muffins, these treats abound (but not for long!).
One of the quintessential hallmarks of fall is the Pumpkin Spice Latte from Starbucks. It’s a cherished beverage that signals chillier weather and the change of seasons.
But why keep it to beverage form?
Instead, you can enjoy those classic flavors in this pumpkin spice latte popcorn mix!
Pumpkin Spice Latte Popcorn Mix
Popcorn is a favorite frugal snack in our home, and we love to dress it up for the holidays, like with Valentine’s Day popcorn.
And this pumpkin spice latte version takes it to the next level!
It’s made up of pumpkin pie popcorn and coffee popcorn mixed together, complete with M&Ms and pumpkin baking chips.

How to Make Pumpkin Spice Latte Popcorn
It’s simple to make this popcorn! You start out with popped popcorn, then create syrups to drizzle over the popcorn. Then it all bakes for a bit.
Ingredients You’ll Need:
- Popped popcorn
- Butter
- Sugar
- Water
- Dark corn syrup
- Vanilla extract
- Salt
- Pumpkin pie spice
- Strong coffee
- Finely ground coffee
- M&Ms (pumpkin pie flavored or other variety)
- Pumpkin baking chips
How to Make It:
Make the pumpkin pie syrup. First, you’ll combine some butter, sugar, water, dark corn syrup, vanilla extract, salt, and pumpkin pie spice in a saucepan on the stove. Heat it to melt the sugar and create a syrup.
Pour over popcorn. Next, you’ll pour that over some popcorn on a baking sheet. Pop it in the oven, stirring every few minutes as it bakes. Then cool completely.
Make the coffee syrup. Combine butter, sugar, coffee, dark corn syrup, and coffee grounds in a saucepan, cooking to melt the sugar. Then, pour that over some popcorn on a baking sheet and repeat the baking process.
Combine. Once all of the popcorn has cooled completely, combine it in a large mixing bowl with some pumpkin M&Ms and pumpkin baking chips. Enjoy!
Notes and Adaptations:
- Feel free to use plain M&Ms if you can’t find pumpkin M&Ms.
- If you can’t find pumpkin baking chips, caramel baking chips would be a good substitute.
Pumpkin Spice Latte Popcorn

Ingredients
- For the Pumpkin Pie Popcorn:
- 3 cups of popped popcorn
- 3 tbsp butter
- 1/4 cup sugar
- 2 tbsp water
- ¼ cup dark corn syrup
- 1/4 tsp vanilla extract
- 1/4 tsp salt
- 1 tsp pumpkin pie spice
- For the Coffee Popcorn:
- 3 cups popped popcorn
- 3 tbsp butter
- 3 tbsp very strong coffee
- 1/4 cup sugar
- ¼ cup dark corn syrup
- 1 tsp finely ground coffee
- Mix-ins:
- 1 cup of M&M’s Pumpkin Pie flavored
- 1 cup of pumpkin baking chips
Instructions
- Line a baking tray with parchment paper. Preheat oven to 300F.
- First, make the pumpkin pie popcorn by placing 3 cups of “popped” popcorn in a large bowl. In a saucepan over medium heat, melt butter together with the sugar, corn syrup, water, vanilla extract, salt and pumpkin pie spice.
- Cook and stir over medium heat until sugar is dissolved.
- Once sugar is dissolved, slowly pour mixture over popcorn; toss with a spoon until the popcorn is fully coated.
- Take the popcorn and spread it onto the parchment covered baking tray. Bake in the oven for 12-16 minutes, stirring every 4 minutes.
- Remove from oven and cool completely.
- While that cools, start making the coffee flavored popcorn. Place 3 cups of popped popcorn in a large bowl.
- In a saucepan over medium heat, melt butter, brewed coffee, sugar, corn syrup, and ground coffee.
- Cook and stir over medium heat until sugar is dissolved.
- Once sugar is dissolved, pour mixture over popcorn; toss to coat the popcorn.
- Spread popcorn onto a parchment covered baking tray. Bake for 12-16 minutes, stirring every 4 minutes.
- Remove from oven and cool completely.
- Once all the popcorn has cooled, combine both flavors of popcorn in a large bowl and add your M&Ms and pumpkin baking chips. Toss to combine. ENJOY!!
