Make the Bisquick substitute. Since we’re not using baking mix, we need to make a substitute for it in order to achieve the best results.
In the bowl of a food processor, combine some self-rising flour with some vegetable shortening. Pulse a few times to combine into small pieces.
Combine ingredients. In the bowl of a stand mixer fitted with a paddle attachment, combine flour mixture, shredded cheese, and raw breakfast sausage. Mix together on low speed until combined.
If you don’t have a stand mixer, you can combine everything by hand in a large bowl.
Add milk, if needed. Add milk, one tablespoon at a time, while mixing on low speed, until the mixture holds together well.
Scoop and bake. Using a cookie scoop or tablespoon, scoop out the mixture and roll into 1-inch balls. Place the uncooked sausage balls on a baking sheet lined with parchment paper.
Bake for about 20-25 minutes, or until golden brown and cooked through.
Remove the cookie sheet from the oven and let cool slightly before serving warm, or allow to cool completely and serve at room temperature.
Notes and Adaptations for These Easy Sausage Balls:
- Sausage balls are endlessly adaptable! You can make spicy sausage balls by choosing hot sausage instead of mild or medium ground sausage, or add a bit of cayenne pepper to the mix. Feel free to change the type of cheese, too. Want to add some seasonings? Try a teaspoon of garlic powder, and half teaspoon of onion powder, and a tablespoon of dried parsley. Or serve them with your favorite dipping sauce!
- Leftovers can be stored in an airtight container in the refrigerator for 3-4 days.
- If you don’t have self-rising flour on hand, you can make your own using all-purpose flour.
- Freeze uncooked sausage balls on a baking sheet in the freezer, then transfer to a freezer bag and store for 3-4 months. When ready to bake, let them sit on the baking sheet at room temperature for 15-20 minutes, then bake.
